Every year — for over ten years now — we brew a beer for friends and family who gather around a full holiday table. This is our annual winter warmer, which is not really a style of beer per se , but rather a name for a broader brewing tradition at the end of the year. Winter warmer can also be interpreted in a more sensory way — as a beer that, with the warmth of its flavors, drives away the chill of long winter nights.

Every year, the team gathers around Winter with a special passion. While preparing the final product, we are also warmed by the atmosphere created in the brewery. As Christmas classics blare over the speakers, the entire team gets to work — bottle after bottle is carefully hand-wrapped, each wrap carrying a piece of our story and dedication. This is not just about beer production, it is about the ritual and the magic of creation, where the two meet — now we can call it tradition and our need to do things our own way.

ABOUT PELICON WINTER BEER:
Pelicon Winter is a dark beer brewed only once a year. A rich palette of specialty barley malts and winter spices matures for months before the beer reaches your glass. Every year the recipe is slightly different, so each batch is also marked with a vintage. The bottle is hand-wrapped in festive paper, further emphasizing the highly anticipated seasonal brew.

In this year's vintage, brewer Matej Pelicon, with With a masterful dedication to detail and ingredients , he combined orange peels with vanilla, cinnamon and licorice. Once again, we are waiting for the discovery of layers of flavors and the joy that accompanies every good drink or meal!

ABOUT THE HISTORY OF STYLE:
It is considered the epitome of European culture to treat ourselves a little more to the holidays and have a more abundant table. Brewers are no exception — for the “vahte” they treated themselves to a larger portion of barley, higher alcohol, and some expensive spices on top. In the old days, spices also replaced hops, which are usually less in holiday beers, so that the beer could be heated if necessary — as is done with mulled wine today. In England, there was even a tradition of dipping spicy and sweet Christmas bread into warmed beer. This piece of history served as inspiration for us to create a beer that goes well with Slovenian potica.
