This year, the heavyweight of big flavors, BIG IPA – triple IPA , returns , this time with a special ingredient that will take the beer to a whole new level – an extract from the skins of sauvignon grapes, Phantasm .
Phantasm is an innovative ingredient derived from the skins of Sauvignon Blanc grapes and is taking the brewing world by storm. Not only does it give beer intense fruity aromas, which is the holy grail of any modern craft brewery, but Phantasm is made from skins that would otherwise be discarded by winemakers . With its high thiol content, it brings exotic notes of tropical fruits such as mango, pineapple and citrus, making every sip even more of an experience.

The ingredient comes from New Zealand – from the famous Marlborough wine region , known for its richly aromatic wines and hops. And it is precisely these famous New Zealand notes that will further emphasize the character that we are used to in New England IPAs. VELIKI IPA, already famous for its intense flavor , will now be an even more explosive beer – perfect for lovers of tropical, hazy IPA styles.

About triple IPA:

Although giants don't like to sit in the big picture, we've put this one in the "triple IPA" style. The rich, candy-like body is supported by a huge amount of hops, which become even more fragrant when combined with various yeasts. This premium beer is balanced, with the sweetness perfectly matched by the abundance of hops. The bitterness is mild but persistent, and each sip takes you on a journey through a distinct flavor that develops into a long-lasting aftertaste.

A seasonal beer that we have been brewing every autumn since 2017. Every year we try to extract as many fruity aromas and flavors as possible from the raw materials. Each year we achieve this in a slightly different way.

What does it mean if beers are top or bottom fermented?

Top fermentation is most often associated with ale-type beers. It is a method of alcoholic fermentation that occurs in beer when active yeasts rise to the surface of the wort and form a crown (a kind of yeast foam) on it. The yeast is predominantly Saccharomyces Cerevisiae, which is colloquially called ale yeast. Such yeasts prefer higher fermentation temperatures, approximately 15 to 25 degrees.

The opposite is true for bottom-fermenting yeasts, which are associated with lager-type beers. This fermentation takes place at the bottom of the container. It is predominantly Saccharomyces Pastorianus yeast, or lager yeast. Such yeasts prefer lower fermentation temperatures, around 5 to 10 degrees.
