Buckwheat flour is a rich source of fiber, magnesium, manganese, iron , and contains many antioxidants such as flavonoids . It is high in protein , as well as essential amino acids such as lysine , which are often lacking in other grains. Buckwheat flour is low in fat , but is also rich in healthy fats and omega-3 fatty acids .
