The cheese is made from unpasteurized milk in the summer, when cows graze freely on the Matajur hills. It matures on the mountain for at least three months, thereby acquiring the right aromas and flavors. When making cheese, the cheesemaker adds dried olive leaf powder to the mass. The leaves are a useful and powerful antioxidant. The leaves are collected after harvesting the olives in the Manžana olive groves.
